La Petite Maison's Drink – The Method

WHere is a simplified interpretation of a beverage from the seasonal menu. This is a large-volume prepared mix which is packed with the flavours of a festive period, making it perfect for your celebration. Save the extra citrus syrup you can use for brunch beverages, desserts, or for more rounds of bikinis.

Bikini Recipe

Serves 10 people

Ingredients for the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put every components into a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Then, take off the burner allowing it to reach room temperature entirely. Transfer to a sealable bottle, cap it and store chilled, where it will keep for around one month.

For the Cocktail Base: Combine all the liquid ingredients into a large bottle, allow it to infuse for an hour, then pass it through preferably using a fine cloth, making it fully clarified.

When ready to serve: Measure 85ml of the cocktail base into your stirring glass containing ice, gently stirring carefully for one minute to chill. Pour to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
